The Green Zone

ApEx will be producing The Green Zone, a new feature display at the 2010 show. It will focus on the latest sustainable “green” products and solutions for the foodservices industry. The Green Zone will provide an array of items that meet the highest energy/ green standards in each product category. There will also be educational workshops to support this show feature.

Categories

Foodservice Equipment Primarily focused on reduced energy and water use categories include:

  • Refrigeration – cooling and freezing
  • Cooking – electric, gas, fryer, microwave and combined
  • HVAC - hoods, thermostats, and air handling
  • Water – reduced use through low flow devices, alternatives to bottled water Services Environmentally friendly products
  • Environmentally Sensitive Cleaning Products
  • Grease Recycling
  • Responsible waste handling, compostable disposables
  • Miscellaneous, clothing, mats etc. made from sustainable source material Food
  • Any food product from a sustainable source

Criteria

ApEx Show exhibitors will be offered the opportunity to showcase their products within this display area. Products displayed must be defined as having industry leading capability in the area of sustainability. For greater clarity, equipment must be energy rated and received a rating in the top quartile.

  • Products must be displayed on the show floor to be eligible for this feature area.
  • There will be three products permitted within the same category.
  • Exhibitors may only display two of their products in this area.
  • Products will be selected on a first-in-line basis.

 

The First ApEx Culinary Salon

Future chefs will test their competitive skills at ApEx 2010. Culinary students representing the many community colleges throughout Atlantic Canada will compete in this Junior Cold Plate Competition on Sunday, April 18th at ApEx.

Established CCFCC judges will declare a gold medal winner after evaluating each entry and awarding scores based on various elements. Each student will be judged on many variables including first impression, professional techniques and skills, presentation, service and more. The competition encompasses: restaurant platters, individual plated desserts, appetizers, entrees, wedding cakes, casual luncheon, chocolate showpieces, and bread displays.

 

Chef Wars ll – A Culinary Battle

The exciting Chef Wars returns to the show following last year’s successful introduction. The 2009 event saw Chef Bee Choo Char of Gio emerge as champion of the two day battle.

One stage and four teams from:

  • Café 101, Holiday Inn Harbourview
  • Little Europe
  • Stone Street Café, Delta Hotels Halifax
  • The Press Gang

Chefs from these restaurants will do battle over two days to determine the champion on the final day. Watch as competitors demonstrate their skills in this unique black box style competition. Be there to find out and cheer on your favourite.

 

Source Local Marketplace

ApEx will again partner with the NS Departments of Agriculture, Fisheries and Aquaculture and Select Nova Scotia to create a unique and distinct exhibit area – Source Local Marketplace. The participants are small regional producers who offer various food and beverage products for restaurants.

These exhibitors have a common objective to reach owners, chefs, and cooks in the Atlantic region. Some of the confirmed participants are: King’s Processing, VanDyk’s, Randsand, Armstrong, Sainte Famille Winery to name but a few. This is your “source” for fresh, regional products.
